Thanksgiving Dinner


We had yet another wonderful Thanksgiving at our house.  We had a very packed kitchen/dining room with 20 family members this year.


Thanksgiving is my husband's favorite holiday.  He just loves to cook {so glad since I can't!}.  The day we moved into our house, my aunt said she knew exactly why we bought this house- because he could fit more people in the dining room for Thanksgiving!

Every year I like to try out some new recipes and everyone doesn't seem to mind. I really tried to concentrate on eating seasonally and choosing sides that I could find locally.
So here's the newbies:

This was absolutely delicious and my favorite.  I have been considering what I can pair it with to make a full dish out of it {thinking quinoa}.  I can't wait to eat this for lunch.

Beets!
I have 2 rows of huge beets growing in my backyard garden {apparently they didn't need much attention}.  I've tried to cook beets before and NO ONE liked them.  So as I asked around for a good beet recipe, I had an intern send me one that included honey.  Honey & Beets?  Of course we were game!
My Aunt says I only grow and cook beets because I think they are so pretty {and she's right}.  But now that I have a great recipe, I will be eating them as well! Recipe to be posted soon.

Matt is well know for his stuffing {you hear as the dishes get passed around the table- is this Matt's stuffing?}  I can't give away his recipe but the above picture will give you a clue {and I'll tell you there are apples in it}.

Starting to look for more seasonal recipes as I gear up for the Dark Days of Winter Eat Local Challenge.  It's confirmed I will be making my own cheeses next week-end {Finally found a real class to take!}  Anyone have a good recipe to try?

Parmesan butternut squash gratin sounds nearly too good to be true. I am glad you had a great holiday and have a husband who loves to cook!
