Dark Days Challenge

So I am still trying to make one meal a week with sustainable, organic, local, and ethical ingredients.  As it's finally getting colder, there isn't much left in my own garden or even the garden at work.
I was able to find the ingredients for kale slaw with red cabbage and carrots.  I have been really making an effort to eat healthy this year and even started running with a friend.  So I had this salad for dinner and then again for lunch.  It was even better the next day.


Aside from the dressing (I'm a novice at this- give me time) all were found at my local GreenMarket.  I was super happy to try out the nut mix from Our Daily Eats.  At their booth I was recommended to try the Rosemary & Maple and I'm glad I did.

On my journey to eat healthy and local, I have been eating eggs for breakfast (2 egg whites and 1 whole egg).  This seems to hold me over the entire morning, even during a busy "running around the greenhouse" day.  My new intern at work has chickens at her house (lucky!) so we started swapping eggs for honey.  I love bartering!  And I love fresh eggs!

Have been trying out some soup recipes I found on Pinterest.  Will be posting more of those soon!
